Changing Z position while in operation and breakpoint resume function

Hello , while operation what is the procedure to change Z axis position in pause condition, also can individual axis can be zero'ed as till now I have been using zero all axis command only.
For entering breakpoint due to power outage , the command is shift and pause and after that what key need to be pressed to resume operation???
